Kitchen Exhaust

The odorous compound found in kichen exhaust is mainly hydrogen sulfide. Along with cooking gas, carbon dioxide, carbon monoxide, and nitrogen dioxide are also released through the exhaust. Hence, it is necessary to get rid of these gases from the air in the kitchen to provide a safe work environment. Ozone finds good use in such problems. Oxidation using ozone or activated oxygen ions has been used to treat odour emissions from commercial and industrial kitchen processes. A mixture of oxygen ions or ozone is injected into the airflow of the exhaust duct or into a reaction chamber where reaction occurs with the odour and other pollutants. Odours are oxidised in the reaction chamber and the treated air is expelled devoid of any odorous compounds.
